Sweet & Tangy Vegan Coleslaw

This right here is a family recipe, folks. While it may be the easiest family recipe alive, it’s definitely does not lack in flavor! And no, I don’t mean the coleslaw. Yes, you can put this sauce over coleslaw (which is a great way to eat it), but my family and I’s most favorite method is pouring it over homegrown tomatoes. There’s nothing like tomatoes & this sauce (see pics at the end of this post!). We just recently made a discovery that it makes amazing coleslaw. Hence, this recipe. Seriously––bring this stuff to a cookout, and no one will be able to tell the difference!


INGREDIENTS

3/4 cup vegan mayonnaise

1/4 cup seasoned rice vinegar (regular is fine, but seasoned makes it better!)

1 tbsp sugar

1 package raw coleslaw


Whisk the vegan mayo, seasoned rice vinegar, and sugar together until sugar is well dissolved. Pour over coleslaw and mix well. To eat immediately, let the coleslaw sit for at least 10 minutes so flavors can develop. Letting it sit overnight is even better! Stir well before serving.


The tomato way… also perfect for cookouts!

Honestly, tomatoes were made for this sauce. Just chop up some large pieces or really thick slices of tomatoes, and drizzle the sauce on top! You can add any herbs you want, as well. Heaven in a bowl.
