Carrot Ginger Dressing
Ever go to a Japanese restaurant and order a salad? The tangy ginger dressing they put on it always takes iceberg lettuce to another LEVEL. I wanted to try making it at home, since it’s one of my favorite salad dressings. This carrot ginger dressing recipe is ridiculously easy to make and is done in minutes! Chop up some fresh lettuce, add some veggies, and pour this over it and you’ve got yourself a quick and flavorful dinner. Make some of my homemade sushi on the side while you’re at it. ;)
INGREDIENTS
6 small carrots or 2 large carrots
1 medium piece of fresh ginger (about the size of your palm)
1/4 onion
1/4 cup rice vinegar (seasoned or regular––I used a little of both)
1/4 cup olive oil
2 tsp sesame oil
2 tsp soy sauce or miso paste
Dice the carrots and onion. Peel the ginger root and dice into small pieces.
Add the carrots, onion, ginger, and the rest of the ingredients into a blender and blend. Enjoy!
*NOTE: Whether you have a high powered blender (like a Vitamix) or a small blender (I used my Magic Bullet!), this dressing is a little more on the chunky side because of the carrot texture. However, when you add it to lettuce, it tends to liquify more and the flavor is well distributed. It’s very similar to the fresh dressings you’ll find in Japanese restaurants! For more of a kick, add extra ginger.
