Homemade Vegan Sushi

Now, this is a dish I will literally never get sick of! Sushi is a sort of comfort food to me and once I discovered how easy it is to make your own, its become a regular dinner for me. All you need is white rice, sushi nori, and any veggies your heart desires. Top it all off with wasabi, sushi ginger, and my soy dipping sauce and you’re good to go. Happy eating!


INGREDIENTS


Sushi Rolls:

3 sushi nori sheets (I find these at my local international store, but you can also find them on Amazon)

1 1/2 cups white rice (you can also use sushi rice–I find white rice works perfectly fine!)

veggies for filling (suggestions: carrots, cucumbers, cabbage, avocado, green onion)

sesame seeds

wasabi (optional)

sushi ginger (optional)

Soy Dipping Sauce:

2 tbsp soy sauce

1 tsp sesame oil

1/2 tsp ginger powder

1/2 tsp sesame seeds


1. Cook rice in your desired way (I use a rice cooker) and spread the hot rice on a plate to sit for about 2-3 minutes. This lets the rice cool down to a point where it is still warm, but not so hot that it will rip the nori sheet.

2. Lay down a sushi nori sheet and spread about a 1/2 cup of warm white rice on one end, spreading it out slightly toward the other end of the sheet. Leave about an inch or so of clean nori at the other end of the sheet.

3. Place desired veggies at the more rice-dense side of the sheet. I like to make strips of cucumbers and carrots or even add cabbage or avocado. Tofu is also a good choice. This is where you get to be creative!

5. Roll the sushi nori from the veggie side all the way up to the other side until you have a sushi roll.

6. Cut the sushi roll with a very sharp knife to make little rolls. Top with sesame seeds.

7. Eat your sushi with ginger, wasabi paste, and the soy dipping sauce. Don’t forget your chopsticks! :)

For the Soy Dipping sauce:

Whisk all ingredients together. Enjoy!
