Lazy Vegan Ramen Stir Fry
I don’t know about you, but with so much uncertainty in the world, I’ve been wanting quick, easy, and lazy vegan meals to put together for lunches or dinner. Noodles, especially ramen, are such a comfort food for me. I loved eating ramen noodles growing up, and now that I’m an adult, eating ramen brings back all those comforting feelings. This recipe is a ridiculously easy vegan lunch idea and is so flavorful! Try these easy vegan ramen noodles for lunch or for an elevated take on dinner.
Lazy Vegan Ramen Stir Fry
1 pack ramen noodles
1 tbsp sesame oil
1 tbsp soy sauce
1 clove chopped garlic
1 tsp sesame seeds
1 tsp crushed red pepper
2 green onions, finely chopped
Place the ramen in a bowl and fill the bowl with water. Microwave the ramen for 2 minutes.
While boiling the ramen, sauté the sesame oil, soy sauce, garlic, sesame seeds, crushed red pepper, and one green onion together in a pan.
When the ramen is “done” (it should be a little soft but still have a little stiffness to it), drain the water from the bowl.
Place the noodles into the pan with the sauce and mix to combine; about 3 minutes. Add more sesame oil if the noodles start to stick.
To finish, place the noodles on top of spring mix or your favorite Asian vegetable (bok choy is another good option!). Garnish with crispy garlic edamame beans, more sesame seeds, Sriracha, peanut sauce, or my personal favorite––spicy chili crisp! The options are endless. Enjoy your ramen! :)
