Vegan Greek Tacos

These vegan greek tacos are high in plant protein and will be sure to satisfy your craving for Greek food! This recipe uses tempeh (fermented soybeans) which has great amounts of protein, is high in calcium, and also is rich in prebiotics which promote healthy bacteria in your digestive system. Finish these tacos off with a sprinkle of dill and you have a perfect weeknight dinner!


INGREDIENTS

2 cans chickpeas

8 oz. packaged tempeh (LightLife’s tempeh works great!)

1 cup Silk plain soy yogurt (or any plain vegan yogurt)

¼ cup vegan mayonnaise

fajita flour tortillas

apple cider vinegar

oregano

dill

olive oil

minced garlic

soy sauce (or tamari)

lemon pepper

lemon juice

garlic powder

1 cucumber

spinach (optional)

grape tomatoes (optional)


For the crispy chickpeas:

  1. Preheat oven to 400. Drain and rinse chickpeas. Season with dill, garlic powder, and lemon pepper. Roast for 15-20 minutes or until crispy/lightly browned.

For the Greek tempeh:

  1. Slice block of tempeh into ¼ inch-thick slices. Lightly coat pan with cooking spray and sear tempeh for 5 minutes or until one side is lightly browned. Then, flip each slice over and add ¼ cup water. Place lid on pan and steam the tempeh for another 5 minutes.

  2. While tempeh is steaming, make the flavoring for it. Whisk together oregano, dill, olive oil, minced garlic, soy sauce (or tamari), lemon pepper, and lemon juice. Pour mixture over the tempeh and place the lid back on for another 5 minutes. After 5 minutes, flip the tempeh once more until perfectly browned.

For the vegan tzatziki sauce: 

  1. Combine 1 cup of vegan yogurt, ¼ cup of vegan mayonnaise ¼ cup apple cider vinegar, lemon juice, garlic powder, dill, and olive oil. Whisk until well incorporated. Add more or less vinegar, lemon juice, or yogurt as desired for taste. Finally, add half of the cucumber.

To make the tacos, I started with the tortillas and added some spinach, tempeh, chickpeas, the rest of the cucumber, tomatoes, and topped with tzatziki and more dill. These are super refreshing and offer the perfect balance of carbs, protein, and fat. Enjoy!
