Vegan Mashed Potato Bowl
Potatoes are life. There—I said it! For a healthy dose of carbs and comfort food combined, these Vegan Mashed Potato Bowls really hit the spot! They’re perfect for cozy winter nights when you just want some food that feels like a warm hug. Collard greens, creamy Yukon gold potatoes, and a savory vegan gravy make this a winter weeknight winner.
Vegan Mashed Potato Bowls
For the potatoes:
6-7 Yukon gold potatoes
1-2 tablespoons vegan butter
vegetable broth
salt
For the gravy:
1/2 onion, finely diced
1/2 teaspoon salt
1 clove garlic, minced
3 tablespoons vegan butter
3 teaspoons flour
2 cups vegetable broth
1 teaspoon nutritional yeast
For the soy curls:
1 cup Butler Soy Curls
1 cup vegetable broth
1/4 teaspoon salt
1/4 teaspoon poultry seasoning
Optional:
collard greens or broccoli
Peel the potatoes and cut into even pieces. (I make mine about 1x1 inch so they cook faster.) Place them in a pot, cover with water, and boil until very soft/falling apart.
To prepare the soy curls, place them in a bowl with the vegetable broth, salt, and poultry seasonings. Let the curls rehydrate. (Once rehydrated, you can either sauté them or heat them up in the air fryer/over!)
While the potatoes boil and the soy curls rehydrate, make the gravy. In a saucepan or large skillet on medium heat, add the onion, salt, garlic, and vegan butter. Sauté until the onion is translucent.
When the onion mixture is simmering, sprinkle in 2 teaspoons of the flour. Keep stirring the mixture while adding the flour.
Once the flour is incorporated, add the vegetable broth and nutritional yeast. Bring to a low boil.
Sprinkle the last teaspoon of flour into the gravy and mix well. Let the gravy simmer on medium heat, stirring frequently until reduced down (about 15-20 minutes).
Drain the water from the potatoes. Add the vegan butter and mash. As you mash, add splashes of vegetable broth and a couple pinches of salt. (Veggie broth is a trick to get your potatoes really creamy!)
To assemble the bowls, add the mashed potatoes, collard greens, and soy curls. Top with gravy (or more vegan butter) and enjoy!
